This Serrano ham without additives is an excellent choice if you want a quality Serrano ham.
Apart from having no additives, and therefore no nitrates or preservatives, just sea salt, it is matured for a minimum period of 17 months in the province of Granada in Sierra Nevada at altitudes between 1200 and 1750. The climate is very dry and cold in winter, with hot summers. The microclimate and purity of the air in Trévelez are conducive to a totally artisanal production process, with no artificial additives.
The reason why we only offer 17-month hams in slices, and not 23-month hams, is because of the size of the hams. The 23-month hams are very big and we would have very large slices that would be difficult to vacuum-pack.
So the quality is the same, there's just a difference in the size of the hams.
