This protected designation of origin is recognized as one of the most prestigious for the production of Iberian ham.
Iberian pigs roam freely in vast landscapes of natural pastures and holm oaks. This unique environment is conducive to extensive farming in keeping with Iberian tradition and contributes directly to the exceptional quality of the meat.
During the montanera, the pigs feed mainly on acorns that have fallen from the oak trees, as well as on natural resources found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This particularly rich diet promotes the infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and characteristic aromas of the great Iberian bellota hams.
