EXQIUM's 100% Iberian Bellota Pata Negra boneless shoulder comes from purebred Iberian pigs raised in freedom in the dehesas of Andalusia, in southern Spain. This natural environment, consisting of pastures and holm oaks, provides an ideal ecosystem for the extensive breeding of Iberian pigs and contributes directly to the exceptional quality of Iberian products.
Iberian pigs roam freely in the dehesa landscape. During the montanera, an essential period in Iberian pig farming, they feed mainly on acorns that have fallen from oak trees and on natural resources found in the pastures. Each animal can consume between 8 and 10 kg of acorns per day. This exceptional diet promotes the natural infiltration of fat into the meat and contributes to the characteristic aromatic richness of bellota Iberian products.
This shoulder is made from only two ingredients: Iberian shoulder and sea salt. No additives or preservatives are added. This preparation respects the tradition of Iberian charcuterie and preserves the authenticity of the product as well as the rich aroma developed during the curing process.
After salting, the shoulders are slowly cured in natural cellars for around 24 months, depending on the weight of the piece. This gradual maturation develops a supple texture and a rich aromatic palette with delicate notes of dried fruit.
The piece is sold boneless to make it easier to cut and enjoy. This presentation is ideal for making thin slices or preparing an Iberian charcuterie platter while retaining the taste qualities of a traditional pata negra shoulder.
