The 100% Iberian Pata Negra Bellota shoulder from Señorío de Montanera is one of the leading names in Iberian ham. Señorío de Montanera is renowned for its high standards, artisanal expertise, and the exceptional consistency of its products.
This shoulder is produced in the province of Badajoz, in the heart of southwestern Spain. This region is considered one of the native habitats of the Iberian pig. Its dehesa ecosystem, composed of vast oak forests and natural pastures, offers an ideal setting for traditional farming.
The animals are of pure Iberian breed and roam freely in large areas certified for the raising of bellota Iberian pigs. This low stocking density contributes to the quality of the meat and the animals’ well-being.
During the montanera, the pigs feed exclusively on acorns, grasses, and roots. This exceptional diet promotes the marbling of fat into the muscles and gives the shoulder its characteristic rich flavor.
The shoulder is cured for approximately 24 months in natural cellars. Maturation occurs solely through natural air circulation, without any artificial processes. This extended resting period allows for the development of a melt-in-your-mouth texture and complex aromas.
Each piece bears a black band certifying its 100% Iberian Bellota Pata Negra status, a guarantee of authenticity and quality.
