The oak forests have huge expanses with trees that yield lots of acorns. Each pig will eat between 8 and 10 kgs of acorns a day. This diet will give a very good taste to the fat of this shoulder.
The 100% Iberian breed means that we have a shoulder with a good amount of fat infiltrated and covering the ham. This allows for long maturing periods of around 24 to 28 months.
