This lomo comes from purebred Iberian pigs raised free-range in certified organic dehesas in southwestern Spain. Each animal has vast natural spaces to roam and forage.
The pigs feed primarily on acorns, supplemented by grasses, roots, and other natural resources. During the montanera, an animal can consume several kilograms of acorns per day, which enriches the meat with flavor and finesse.
The grazing areas are certified organic, guaranteed to be free of pesticides, GMOs, and chemical treatments incompatible with organic farming.
The organic tenderloin is prepared according to a traditional recipe from Extremadura using a natural, artisanal process, without additives or artificial preservatives. It bears the European Union organic certification.
With no external fat, the cut features a beautiful reddish-purple hue and fine marbling of intramuscular fat. On the palate, it reveals a juicy texture, an intense aroma, and a pronounced bellota flavor that lingers for a long time.
