Señorío de Montanera is a company renowned for its high standards in the premium Iberian sector. It values extensive farming, respect for tradition, and the quality of products made from 100% Iberian acorn-fed pork.
This product is made from a loin sourced from purebred Iberian pigs raised in the wild and fed on acorns in the dehesas. This exceptional origin imparts finesse, marbling, and aromatic richness.
Unlike many Iberian lomos, the Lomo Doblado contains no paprika. Its deliberately light seasoning, based on garlic and salt, highlights the natural flavor of the acorns and the meat.
After preparation, the loin is covered with a thin layer of lard and then folded in half before being stuffed into casings. It is held together by strings that play an essential role during curing. This traditional method gives the product its name and unique character.
Because it is thicker than a classic lomo, the Lomo Doblado requires more than six months of aging. This slow maturation develops a melt-in-your-mouth texture and depth of flavor.
On the palate, it stands out for its remarkable juiciness, a texture that melts delicately, and a powerful flavor reminiscent of the aftertaste of the finest bellota Iberian hams.
