This ham, produced in Andalusia, is unique in that it contains no additives, nitrites or preservatives.
The only ingredients are ham and salt.
The ham is aged naturally for a minimum of 40 months, in drying sheds whose temperature and humidity are regulated by opening and closing the windows.
A very pure breed, free-range rearing with a diet rich in acorns and the absence of additives give perfect balance to this exceptional piece.

Iberian Bellota Pata Negra shoulder from 100% Iberian Exqium breed.
This shoulder is produced in Andalusia and comes from purebred Iberian pigs that are fed on acorns, grasses and roots.
The production of Exqium Iberian ham and Iberian shoulder has the particularity of not containing additives or nitrites. The only ingredients are the shoulder and salt.
Natural ripening is done with temperature and humidity regulation which is done by opening and closing the windows. This varies between 22 and 28 months depending on the climate of the years and the size of the rooms.

EXQIUM 40-month aged 100% Iberian bellota Pata Negra boneless ham is made from purebred Iberian pigs raised in freedom in the dehesas of southwestern Spain. Fed mainly on acorns during the montanera, these animals develop rich and flavorful meat. Prepared using only ham and salt, with no additives, and then naturally cured for over 40 months, this ham has a melt-in-the-mouth texture and intensely flavorful aromas.
