EXQIUM Cebo de Campo boneless Iberian ham is made from Iberian pigs raised in the dehesa landscapes of Andalusia. This region in southern Spain is renowned for the quality of its pastures and its climate, which is ideal for traditional Iberian pig farming.
The pigs roam freely in vast pastures composed of natural grasslands and oak trees. This natural environment, called dehesa, is a unique ecosystem where animals can move freely and feed on the natural resources available.
Cebo de Campo Iberian pigs are fed selected cereals supplemented by the natural resources found in the pastures. This diet contributes to the development of flavorful meat with a particularly pleasant texture.
EXQIUM ham is made with only two ingredients: Iberian ham and sea salt. No additives or preservatives are added in order to preserve the purity of the flavors and respect the tradition of Iberian charcuterie.
After salting, the hams are slowly cured in natural drying rooms for several months. This gradual maturation process develops the supple texture and delicate aromas characteristic of Iberian hams.
