Purebred Iberian pigs are raised free-range in the heart of the Sierra de Aracena, in the Andalusian dehesas. This non-intensive farming method respects the animals and the natural balance of the ecosystem.
Cinco Jotas 100% Iberian acorn-fed Morcón is made from premium lean cuts such as the presa, loin, and tenderloin. This rigorous selection contributes to its finesse and superior quality.
The meat is cut and then marinated with spices such as paprika, garlic, and salt. It is then stuffed into a thick natural casing, tied, and aged for about 3 months.
Morcón differs from chorizo or salchichón in its rounder shape, its richer texture, and its milder, more delicate flavor. Its lower fat content and extended curing process give it balance and elegance.
