The 100% Iberian bellota Pata Negra BIO Señorio de Montanera shoulder comes from Iberian pigs raised in freedom in the dehesas of Extremadura according to the principles of organic farming. Fed mainly on acorns during the montanera, these pigs can consume up to 8 to 10 kg of acorns per day. Naturally cured for around 24 months, this shoulder has a melt-in-the-mouth texture and rich aromas characteristic of the finest Iberian charcuterie.

The 100% Iberian bellota Pata Negra organic shoulder from Señorio de Montanera comes from purebred Iberian pigs raised in freedom in the dehesas of Extremadura, in southwestern Spain. This natural environment, consisting of vast pastures and holm oaks, provides an ideal ecosystem for raising Iberian pigs and contributes directly to the exceptional quality of the meat.
Iberian pigs roam freely in the dehesa landscape and are raised according to the principles of organic farming. This preserved environment guarantees a farming method that respects animal welfare and the terroir. The quality of the pasture and the freedom of the animals play an essential role in the development of the characteristic flavors of Iberian products.
During the montanera, an essential period in Iberian pig farming, the pigs feed mainly on acorns that have fallen from oak trees and natural resources found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This exceptional diet promotes the natural infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and rich aroma of Iberian bellota shoulder ham.

The shoulder is slowly cured in natural cellars for a period of between 22 and 26 months. This gradual maturation allows it to develop a supple texture and a complex aromatic palette with delicate notes of dried fruit characteristic of Iberian bellota products.
