The 100% Iberian Bellota Pata Negra Cinco Jotas 5J shoulder is produced in Andalusia, the region synonymous with Iberian ham production. It comes from purebred Iberian pigs raised in the dehesas.
The pigs roam freely in natural landscapes of oak trees and pastures. This extensive farming contributes to the meat’s exceptional quality.
During the montanera, the animals feed mainly on acorns as well as other natural resources. This diet promotes fat marbling and contributes to the rich flavor of the Iberian shoulder.
The Iberian shoulder differs from ham in its finer texture and proximity to the bone, which gives it more intense aromas and a more pronounced flavor profile.
The shoulder is cured for several years in natural drying rooms according to Cinco Jotas’ expertise. This process develops a melt-in-your-mouth texture and rich aromas.
Since 1879, Cinco Jotas has selected the finest cuts and upheld a tradition recognized worldwide. Each shoulder is crafted with precision to ensure consistent quality.
This Iberian shoulder offers a melt-in-your-mouth texture, glossy fat, and intense aromas with characteristic notes of dried fruit. It is particularly appreciated by lovers of authentic flavors.
