The 100% Iberian acorn-fed Pata Negra Montesano shoulder is made from purebred Iberian pigs raised free-range in the dehesas of southwestern Spain, particularly in the Badajoz region. This area is renowned for the exceptional quality of its Iberian hams and shoulders.

Free-range farming in the dehesa

The pigs roam freely in vast oak forests. This natural environment, composed of meadows and holm oaks, constitutes a unique ecosystem in Europe and fosters extensive farming that respects tradition.

An exclusively acorn-based diet

During the montanera, the pigs feed exclusively on acorns, grasses, and roots. Each animal can consume between 8 and 10 kg of acorns per day. This exceptional diet enriches the fat with fatty acids and gives the product its characteristic flavors.

A 100% Iberian breed

The purity of the Iberian breed allows for perfect marbling of fat within the muscles. This characteristic guarantees a melt-in-your-mouth texture and the rich aroma typical of the finest Iberian products.

A long and controlled curing process

The shoulder is naturally cured for approximately 24 to 28 months in traditional drying rooms. This gradual maturation allows for the development of intense flavors and a tender texture.
