During the montanera, they feed mainly on acorns and natural grasses. Prepared using only ham and salt, with no additives, and then aged for over 40 months, this ham has a melt-in-the-mouth texture and a rich aroma.

EXQIUM's 100% Iberian bellota Pata Negra boneless ham comes from purebred Iberian pigs raised in freedom in the dehesas of southwestern Spain. These vast natural landscapes of meadows and oak forests provide the ideal environment for traditional Iberian pig farming.
The dehesas form an exceptional ecosystem where Iberian pigs roam freely in the pastures. This natural habitat, composed of holm oaks and cork oaks, provides the animals with an environment rich in natural resources and contributes directly to the quality of the meat.
During the montanera, a key period in the breeding cycle, the pigs feed mainly on acorns that have fallen from the oak trees, as well as on grasses and aromatic plants found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This exceptional diet promotes the natural infiltration of fat into the meat and contributes to the characteristic aromas of Iberian bellota ham.
EXQIUM ham is made with only two ingredients: Iberian ham and sea salt. No additives or preservatives are used. This preparation respects the tradition of Iberian charcuterie and preserves the authenticity of the product.
After salting, the hams are slowly cured in natural drying rooms for over 40 months. This particularly long maturation process develops a melt-in-the-mouth texture and a complex aromatic palette with delicate notes of dried fruit.
