The anchovies are caught in the Bay of Biscay by local boats using traditional and sustainable fishing methods.
Each batch is selected directly at the Getaria fish market to ensure optimal quality and maximum freshness.
Just a few hours after being caught, the anchovies arrive at Nardín, where they are cleaned and prepared by hand with the utmost care.
The speed of processing preserves the characteristic whiteness of the boquerones as well as their tender and appetizing texture.
The anchovies are then marinated in a homemade vinaigrette passed down from generation to generation, made with vinegar and olive oil.
The result is a boquerón with a delicately vinegary taste, perfectly balanced and very tender on the palate.
