Pluma de porc Ibérique, What is it?

Iberian Pluma (pluma ibérica) is a cut of meat from the Iberian breed of pig, known for its tenderness and rich flavor.

Our pluma ibérica comes from purebred Iberian pigs, raised in the wild in the vast pastures of Spain. These pigs are fed an exclusive diet of acorns, giving our pluma exceptional tenderness and a rich taste with subtle notes of hazelnut, the fruit of a natural diet and outdoor rearing. Produced by the prestigious 5j Cinco Jotas brand, renowned for producing some of the finest Pata Negra hams in the world.
This acorn-rich diet combined with a 100% Iberian breed produces exceptional meat.
The best pluma is the one sold frozen, as all acorn-eating pigs are sacrificed in February-March. All this meat is sold throughout the year. Fresh pluma, bought the rest of the year, comes from pigs fed with artificial feed and raised in confinement.

The Iberian pork pluma is found above the shoulder and just next to the entrecote.
To prepare it, simply grill it to your liking with salt and no other seasoning.
