The 100% Iberian Bellota Organic Shoulder from Señorio de Montanera comes from 100% Iberian pigs raised in freedom in the dehesas of southwestern Spain. Certified organic, it guarantees animal and environmentally friendly farming practices.
During the montanera season, the pigs feed exclusively on acorns (bellota) and natural grasses, which promotes a homogeneous infiltration of oleic acid-rich fat.
The shoulder is salted and then slowly cured in natural cellars. This traditional process develops a great aromatic complexity and a supple, melt-in-the-mouth texture.
Smaller than ham, shoulder ham often has a more intense and expressive character, which is appreciated by connoisseurs.
