The EXQIUM 100% Iberian bellota Pata Negra shoulder, free of additives, is an exceptional product, crafted in full accordance with Iberian tradition. It comes from purebred Iberian pigs raised free-range in Andalusia, particularly in the province of Huelva.
The pigs roam the dehesas, with approximately one hectare per animal. This natural environment, composed of oak trees and pastures, allows for extensive farming that respects the animals.
During the montanera, the pigs feed on acorns, grasses, and roots. This diet promotes the marbling of fat throughout the meat and contributes to the rich flavor of the Iberian bellota shoulder.
This shoulder is made with just two ingredients: Iberian pork shoulder and salt. No nitrites or preservatives are used. This guarantees a 100% natural product made using traditional methods.
Curing is carried out without any mechanical processes for approximately 22 to 28 months. The shoulders are naturally dried under the climatic conditions of the Andalusian Sierra, allowing for slow and balanced maturation.
Thanks to the 100% Iberian breed and its diet, this shoulder develops a melt-in-your-mouth texture and rich aromas with notes of dried fruit and great intensity on the palate.
