The EXQIUM 50% Iberian Cebo de Campo shoulder from Andalusia, free from additives, is an authentic product crafted in accordance with Iberian tradition. It comes from free-range pigs raised in the province of Huelva, a region renowned for the quality of its Iberian pig farming.
The pigs roam the dehesas and benefit from a natural environment conducive to their development. This extensive farming method directly contributes to the quality of the meat.
The Cebo de Campo designation guarantees that the animals are free-range and fed on grasses, natural plants, and grains. This diet results in meat that is balanced and flavorful.
This shoulder is made using only pork shoulder and salt. No nitrites or preservatives are used, ensuring a natural and authentic product.
The shoulder is aged for 20 to 24 months in traditional buildings in the Andalusian Sierra. No mechanical processes are used. The natural, dry climate, with cold winters and hot summers, allows for gradual maturation.
