The shoulders are matured naturally, without mechanical means, in buildings in the Sierra region of Andalusia, where they are aged for between 20 and 24 months.
Cebo de Campo is a classification indicating that the pigs are free-range and fed on grass and cereals.
This is a very good, totally natural shoulder, both in terms of its ingredients and its gentle maturing in the Sierra cilimat: always dry but very cold in winter and very hot in summer.
