This lomo comes from the finest 100% Iberian pigs, the same breed used for the finest bellota pata negra hams. The animals are raised free-range in the vast oak forests of Extremadura.
During the montanera, the pigs feed on acorns and natural resources found in the pastures. This diet gives the meat a unique aromatic richness and remarkable marbling.
