The pigs are free-range, which contributes to balanced muscle development and better meat quality.

Their diet is natural: cereals, herbs, plants and fruits from the dehesa, which has a positive influence on taste and organoleptic qualities.
Natural aging lasts around 20 months.
This slow maturation in bodegas and natural drying sheds enables the development of deep aromas, a melting texture and well-matured meat.
Sublime harmony between meat and fat, delicate but flavorful taste, less intense than "Bellota" hams, but more nuanced than a basic ham.

Cebo de Campo Montesierra shoulder represents an excellent compromise: a quality Iberian shoulder, at a level often more accessible than "Bellota" hams, but with very similar gustatory, aromatic and organoleptic characteristics thanks to :
