The animals are of pure Iberian breed, guaranteeing exceptional meat quality, fine marbling, and a melt-in-your-mouth texture characteristic of the finest Iberian products.
The pigs roam freely in the dehesas of the Sierra de Huelva, in the Jabugo region. This natural environment, with low animal density, promotes extensive farming that respects tradition.
During the montanera, the animals feed exclusively on acorns and natural resources. This diet is the source of the complex aromas and nutty flavor typical of premium acorn-fed Iberian ham.
The shoulder is cured for approximately 24 months in traditional drying rooms. The specific microclimate of the Sierra de Jabugo, with its natural regulation of humidity and temperature, allows for gradual and optimal maturation.
The meat is tender and melts in the mouth, with a uniform marbling of fat. On the palate, the texture is supple and the fat melts, releasing complex and harmonious flavors.
