The 100% Iberian Bellota Pata Negra Montesierra shoulder, sliced, 80 g, comes from purebred Iberian pigs raised in freedom in the dehesas of Andalusia, in southern Spain. This natural environment, consisting of pastures and oak trees, is ideal for the extensive breeding of Iberian pigs.
Iberian pigs roam freely in the pastures and are raised using traditional methods. During the montanera, an essential period in their development, they feed mainly on acorns that have fallen from the oak trees and other natural resources found in the dehesa. Each pig can consume between 8 and 10 kg of acorns per day, a diet that contributes to the exceptional quality of the meat.
The Montesierra company, located in the province of Huelva, is renowned for its expertise in producing Iberian products. Thanks to a rigorous selection process and traditional expertise, it offers Iberian charcuterie renowned for its quality and consistency.
The shoulders are slowly cured in natural cellars for around 24 months, depending on the size of the pieces. This gradual maturation process develops a supple texture and a complex aromatic palette with delicate notes of dried fruit.
Presented in thin slices, this Iberian shoulder is ready to eat. It is ideal as an appetizer, as part of an Iberian charcuterie platter, or as an accompaniment to other Spanish specialties.
