EXQIUM's 100% Iberian Bellota Pata Negra shoulder, sliced by hand, 80 g, comes from purebred Iberian pigs raised in freedom in the dehesa landscapes of southern Spain. These vast pastures dotted with oak trees provide an ideal environment for the extensive breeding of Iberian pigs and contribute directly to the quality of the meat.
During the montanera, an essential period in Iberian pig farming, the pigs feed mainly on acorns that have fallen from the oak trees and on natural resources found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This diet promotes the natural infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and rich aroma of bellota Iberian products.
This shoulder is made from only two ingredients: Iberian shoulder and sea salt. No additives or preservatives are used in order to preserve the authenticity of the product and respect the tradition of Iberian charcuterie.
After salting, the shoulders are slowly cured in natural cellars for around 24 months, depending on the size of the pieces. This gradual maturation develops a supple texture and a complex aromatic palette with delicate notes of dried fruit.
Cutting with a knife produces thin slices that respect the structure of the meat and highlight the melt-in-the-mouth texture and rich aroma of the pata negra shoulder. This ready-to-eat format is ideal for an aperitif or for creating an Iberian charcuterie platter.
