During the montanera, they feed mainly on acorns and can consume up to 8-10 kg per day. Slowly cured in the natural cellars of Jabugo and sliced by hand, this shoulder has a melt-in-the-mouth texture and rich aromas characteristic of Iberian bellota products.

The 100% Iberian Pata Negra Bellota Cinco Jotas 5J shoulder, sliced with a knife, 70 g, is produced by the prestigious Cinco Jotas company, founded in 1879 in Jabugo, Andalusia. This region is one of the most renowned in Spain for the production of Iberian ham and shoulder ham thanks to its climate and dehesa landscapes, which are particularly suited to Iberian pig farming.
Purebred Iberian pigs roam freely in the dehesas, which consist of natural pastures and holm oak trees. This environment is conducive to extensive farming in keeping with Iberian tradition and contributes to the exceptional quality of the meat.
During montanera, an essential period in Iberian pig farming, the pigs feed mainly on acorns that have fallen from the oak trees and on natural resources found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This exceptional diet promotes the natural infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and rich aroma characteristic of Iberian bellota products.
The shoulders are slowly cured in the natural cellars of Jabugo for around 24 months, depending on the size of the pieces. This gradual maturation develops a complex aromatic palette with delicate notes of dried fruit.
Sliced with a knife, this pata negra shoulder reveals all the finesse of the meat and its infiltrated fat. The thin slices allow you to fully appreciate the melt-in-the-mouth texture and intense aromas of this great Iberian charcuterie.
