This ham comes from 75% Duroc pigs. This breed is particularly prized for its ability to produce meat with a marbled texture, featuring fat marbling throughout the muscle. This results in a more tender, flavorful ham with a more pleasant texture.
This ham is made with only two ingredients: ham and salt. No nitrites, preservatives, or additives are used. It is an authentic product made using traditional methods.
The ham is aged for at least 24 months in the natural drying rooms of the Sierra de Granada, in Andalusia. This long aging process allows the texture and aromas to develop gradually.
The region enjoys a particularly dry climate, with cold winters and very hot summers. These natural variations are ideal for curing ham and allow for a slow and steady curing process.
No mechanical methods are used during the curing process. The ham matures naturally thanks to the climatic conditions and the artisans’ expertise.
