Conservas La Brújula sardines in olive oil are caught at dawn on the Spanish coast. They are then steamed to improve texture and preserve flavor, then selected and graded by size. Each sardine is carefully cleaned individually. Once cleaned, they are brined and prepared using traditional methods. The sardines are canned by hand before being coated with olive oil.
