The COVAP 100% Iberian bellota "Alta Expresión Oro" Pata Negra boneless half ham comes from purebred Iberian pigs raised in freedom in the dehesas of the Valle de los Pedroches PDO in Andalusia. This protected designation of origin is one of the most prestigious for Iberian ham production.
Iberian pigs roam freely in the vast dehesa landscapes of natural pastures and holm oak and cork oak trees. This exceptional environment is ideal for extensive farming in keeping with Iberian tradition.
During the montanera, an essential period in Iberian pig farming, the pigs feed mainly on acorns that have fallen from the oak trees, as well as on natural resources found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This particularly rich diet promotes the infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and aromatic richness of Iberian bellota ham.
COVAP is one of the most renowned producers of high-quality Iberian ham. Located in the heart of the Los Pedroches valley, this cooperative brings together farmers specializing in Iberian pork production and is widely recognized for the excellence of its products.
The hams are slowly cured in natural cellars for several years. This gradual maturation process develops a supple texture and a complex aromatic palette with delicate notes of dried fruit characteristic of the best Iberian hams.
