The shoulders naturally refined in this region are highly regarded for their quality.
Iberian shoulders and hams have very good fat infiltrations into the muscles.
The 100% Iberian breed and a natural and balanced diet give excellent Iberian shoulders.
The shoulders are aged for approximately 24-28 months.

Bellota shoulder from pigs fed exclusively on acorns, roots and grasses in the oak forests of southwest Spain. Comes from 100% Iberian breed pigs.
The shoulders of the southwest region of Spain are very famous for their quality.
Oak forests have huge expanses with trees that give a lot of acorns. Each pig will eat between 8 and 10 kg of acorns per day. This diet will bring a very good taste to the fat of this shoulder.

The 100% Iberian breed means that we have a shoulder with a good amount of fat infiltrated and covering it. This allows for long curing periods of approximately 24 to 28 months.
