The COVAP 100% Iberian Cebo de Campo "Alta Expresión" DOP Valle de los Pedroches ham is made from purebred Iberian pigs registered in the genealogical registry. This origin guarantees the meat quality, texture, and flavor characteristic of the finest Iberian hams.
The pigs are raised free-range in the dehesas of the Valle de los Pedroches, in Córdoba. This natural environment, composed of centuries-old oak trees, offers ideal conditions for raising Iberian pigs and directly contributes to the quality of the meat.
The animals feed on grains, grasses, flowers, and roots. This varied diet results in a balanced and flavorful meat, characteristic of Cebo de Campo Iberian ham.
This ham bears the Valle de los Pedroches Protected Designation of Origin (PDO), guaranteeing a product made according to strict criteria of quality, origin, and authenticity.
The ham is cured for over 36 months in natural cellars. Depending on the cut and weather conditions, this curing process can last up to 48 months or longer. This slow maturation allows for the development of complex aromas and a melt-in-your-mouth texture.
Each piece is inspected by master artisans who monitor the salting level, aromas, and curing temperature to ensure optimal quality.
