Barbadillo is one of Andalusia’s great historic houses. Based in Sanlúcar de Barrameda, it upholds a renowned tradition of craftsmanship in the production of high-quality wines and vinegars.
This vinegar is obtained through the spontaneous, or natural, acetification of Manzanilla wines. The quality of the source wines directly contributes to the aromatic richness of the final product.
Aging takes place over many years in Barbadillo’s cellars using the traditional Soleras y Criaderas method. This process ensures complexity, balance, and consistent quality.
Its aging with Pedro Ximénez wine gives it a light, natural sweetness. It is the sweetest vinegar in the Barbadillo range, while retaining a delicate and elegant acidity.
