Nardín Cantabrian anchovies are among the most popular Spanish semi-preserved foods, prized for their quality, melt-in-your-mouth texture, and intense flavor.
Only anchovies of the Engraulis encrasicolus species are used. They are selected directly at the Getaria fish market from fishermen who catch them in the Bay of Biscay.
The anchovies are caught in the spring, the ideal time when they are at their best quality, the perfect size, and have exceptional flavor.
As soon as they arrive at the workshop, the anchovies are carefully cleaned by hand to remove all bones. They then undergo a traditional curing process.
This artisanal process results in anchovies that are particularly tender, flavorful, and well-balanced, highly prized by gourmet food enthusiasts.
The fillets are hand-packed in a selected olive oil to preserve their full flavor and texture until ready to enjoy.
