Idiazabal AOP cheese is one of the most iconic cheeses in northern Spain. Originating from the Basque Country and Navarre, it is renowned for its character and authenticity.
The Idiazabal Protected Designation of Origin guarantees the cheese’s origin, the quality of the milk, and adherence to traditional production methods.
This cheese is made from raw milk from Latxa sheep, a native breed of the Basque mountains. These sheep produce little milk, but of exceptional quality, thanks to the region’s pastures and climate.
Aged for at least 2 months, Idiazabal develops a firm texture and rich aromas. It is lightly smoked, which gives it a subtle and elegant aromatic signature.
Its paste is firm, ranging in color from ivory white to straw yellow. It has few “eyes,” which are generally small and irregular. Its rind protects a dense, uniform paste.
Idiazabal cheese offers a pronounced and distinctive flavor with a lovely, lingering finish. The smoky note remains light and does not overpower the overall taste.
Enjoy at room temperature, in thin slices or cubes. It’s perfect on a cheese platter, served with bread, nuts, or a little honey.
