100% Iberian bellota Pata Negra DOP Jabugo ham is made from purebred Iberian pigs raised in freedom in the dehesa landscapes of Andalusia. This protected designation of origin is one of the most prestigious in Spain for the production of Iberian ham.
Iberian pigs roam vast natural pastures dotted with holm oaks and cork oaks. This ecosystem, known as dehesa, provides an ideal environment for the extensive farming of Iberian pigs and contributes directly to the exceptional quality of the meat.
During the montanera, the pigs feed mainly on acorns that have fallen from the oak trees, as well as on grasses and aromatic plants found in the pastures. Each animal can consume between 8 and 10 kg of acorns per day. This diet promotes the infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and characteristic aromas of bellota Iberian ham.
The hams are slowly cured in the natural drying rooms of the Jabugo region for several years. This gradual maturation process develops a supple texture and a complex aromatic palette with delicate notes of dried fruit.
