100% Iberian bellota Pata Negra DOP Jabugo ham comes from purebred Iberian pigs raised in freedom in the dehesas of Andalusia. The Jabugo protected designation of origin is now considered one of the most prestigious for the production of Iberian bellota ham.
Iberian pigs roam freely in the dehesa landscapes, which consist of natural pastures and holm oak and cork oak trees. This unique environment is ideal for extensive farming in accordance with Iberian tradition and contributes directly to the exceptional quality of the meat.
During the montanera, an essential period in Iberian pig farming, the pigs feed mainly on acorns that have fallen from the oak trees and on natural resources found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This exceptional diet promotes the natural infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and rich aroma of Iberian bellota ham.
The hams are slowly cured in natural cellars located in the Jabugo region. This maturing process can take several years and allows the ham to develop a supple texture and a complex aromatic palette with delicate notes of dried fruit.
