Señorío de Montanera 100% organic Iberian bellota Pata Negra ham comes from purebred Iberian pigs raised in freedom in the dehesas of the province of Badajoz, in southwestern Spain. This region is renowned for the exceptional quality of its natural landscapes and for the production of fine Iberian hams.
Iberian pigs roam freely in the vast pastures of the dehesa, which are composed of holm oaks and cork oaks. The pigs are raised according to the principles of organic farming, in a preserved environment where the animals enjoy space, fresh air, and a natural diet.
During the montanera, an essential period in the Iberian pig's rearing cycle, the animals feed mainly on acorns that have fallen from the oak trees, as well as on grasses and aromatic plants found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This exceptional diet promotes the natural infiltration of fat into the meat and contributes to the melt-in-the-mouth texture and complex aromas of Iberian bellota ham.

The hams are slowly cured in natural drying rooms for several years, between 36 and 48 months. This gradual maturation allows them to develop a melt-in-the-mouth texture and a rich aromatic palette with delicate notes of dried fruit, characteristic of the finest Iberian bellota hams.
