The 100% Iberian acorn-fed Pata Negra Jabugo PDO Altanza ham is considered one of the finest Iberian hams. Sourced from purebred Iberian pigs, it is produced in the Sierra de Huelva, at the heart of the prestigious Jabugo Protected Designation of Origin.
Iberian pigs roam freely in the oak forests of the dehesa, with a very low density of about one pig per hectare. This natural environment ensures optimal rearing conditions and directly contributes to the meat’s exceptional quality.
During the montanera, the animals feed mainly on acorns as well as natural pastures. This rich diet promotes the marbling of fat in the meat and gives the ham its unique organoleptic qualities as well as its characteristic aromatic richness.
The ham is produced using traditional artisanal methods. Drying takes place naturally in the upper parts of the buildings, where humidity and temperature are regulated by opening and closing the windows. No artificial processes are used, ensuring an authentic product.
The hams are aged slowly for up to 48 months, depending on the development of each piece. This exceptional aging process allows for the development of a melt-in-your-mouth texture and a complex aromatic profile with deep, elegant notes.
The entire process, from rearing to curing, is supervised by the Jabugo PDO Regulatory Council, guaranteeing the origin, traceability, and quality of this exceptional Iberian ham.
