Manchego Semi-Curado is aged for 3 to 4 months. This shorter aging period compared to Curado allows it to retain a softer texture and a milder flavor, while still maintaining the essence of Manchego.
Compared to Manchego Curado (6 to 8 months of aging), the Semi-Curado is softer, less dry, and offers more delicate aromas. It is an excellent introduction to this cheese.
Available as a whole wheel, this size is ideal for gradual consumption, cutting to order, or a convivial tasting.
Its texture ranges from soft to firm and is easy to cut. On the palate, it offers a balanced flavor with notes of sheep’s milk, a slight saltiness, and a lovely smoothness.
