Nieto Cecina de León PGI: a tradition stretching back over 2,000 years
Nieto Cecina de León PGI is a traditional gastronomic speciality made from carefully selected beef. Salted, lightly smoked, then dried and matured, it possesses a unique flavour profile, the result of expertise passed down for over 2,000 years.
Recognisable by its dark red colour, delicate texture and deep flavours, Cecina de León is a distinctive speciality that deserves to be discovered and savoured slowly.
A speciality inherited from antiquity
Long before the arrival of the Romans, the inhabitants of the north-west of the Iberian Peninsula were already using salting and drying to preserve meat.
In Roman times, Asturica Augusta – now Astorga – was an important trading hub. Easy to transport and preserve, dried meat was a popular food during long journeys.
This tradition has been passed down through the centuries, giving rise to the Cecina de León as we know it today.
The quality of Cecina de León PGI Nieto
The Cecina de León Protected Geographical Indication (PGI) guarantees compliance with precise specifications and the link between this speciality and the region where it is produced.
Nieto continues this traditional craftsmanship through the selection of the meat and its expertise in the various stages of preparation, drying and maturing.
A maturation period of at least 12 months
Nieto’s Cecina de León is matured for at least 12 months, during which time the meat gradually develops its texture and rich flavour.
Salting, light smoking and drying all contribute to creating its distinctive character. The maturing process then allows the flavours to harmonise and gain depth.
Sliced on a meat slicer to appreciate its full finesse
To fully enjoy this Cecina de León, we recommend slicing it using a slicer.
Cutting it into very thin, even slices allows you to appreciate its delicate texture and gradually reveal its aromas. It also makes it easier to prepare attractive tasting platters.
It is best to slice only the amount you need, ideally just before serving.
How should you enjoy Cecina de León Nieto?
Cecina de León is best enjoyed in thin slices, at room temperature, to fully appreciate its aromatic bouquet.
It can be enjoyed on its own, accompanied by good bread or drizzled with a little extra virgin olive oil. It also makes a fine addition to a charcuterie platter or a selection of tapas.
Take the time to appreciate its aroma, texture and rich flavours: Cecina de León Nieto is a true gastronomic treasure.
