The San Simón da Costa Protected Designation of Origin guarantees the cheese’s origin, the quality of the milk, and adherence to traditional production methods.
This cheese is made from milk from cows raised in Galicia, specifically the Rubia Gallega, Pardo-Alpina, and Friesland breeds. These milks impart a smoothness and balance to the final product.
Aged for about 45 days, San Simón develops a supple texture and a homogeneous paste. It is then lightly smoked with birch wood, a tree typical of the region, which gives it its characteristic aroma.
Its paste features small, irregular holes and a color ranging from ivory white to yellow depending on the degree of aging. Its texture is supple and pleasant on the palate.
San Simón cheese offers a mild, slightly tangy flavor with a subtle smoky note. It is low in fat and very pleasant to eat.
