The Northern Albacore (Thunnus alalunga), also known as white tuna, is one of the most prized fish in the Cantabrian Sea. It is particularly prized for its delicate texture and refined flavor.
The albacore tuna used by Nardín is caught in the Bay of Biscay using a traditional line-fishing method, one fish at a time. This technique helps preserve marine resources and ensures sustainable fishing.
The best specimens are selected directly at the Getaria fish market during the summer season to ensure optimal quality.
The fillets and belly cuts are prepared entirely by hand by experienced artisans under the supervision of Nardín’s master canners.
The fillets are preserved in specially selected premium olive oil and then aged for a minimum of two years.
This long maturation process results in a particularly tender and velvety texture, as well as a deep and harmonious flavor.
