This Jabugo shoulder is one of the most popular of the Jabugo DOP.

Within the framework of the Jabugo Protected Designation of Origin (PDO), the SUMMUM" category corresponds to the highest quality.

To qualify for this class, a shoulder must meet strict breed, rearing, feeding, age and maturation criteria.

A "SUMMUM" shoulder has the following characteristics:

  • 100% pure Iberian "pata negra" pig

  • Fed exclusively on acorns and other natural resources from the "dehesa" during the "montanera" period.

  • Free-range, in the dehesas of the Sierra de Huelva (Jabugo zone), low density and traditional environment.

  • Long, natural curing in the specific microclimate of the Sierra de Jabugo, traditionally in drying sheds with natural regulation of humidity and temperature.

All these methods contribute to the ham's :

  • Very fine, melting flesh, with well-distributed fat infiltration.

  • Melting, supple texture, the fat almost "liquefies" in the mouth.

  • Complex, harmonious aromas with hints of hazelnut typical of top-quality "bellota" ham.

A "SUMMUM" shoulder is one of the most prestigious products of excellence to be found under the Jabugo PDO.
