Montesano Pata Negra 100% Iberian Bellota ham comes from purebred Iberian pigs raised in freedom in the dehesas of Extremadura, in southwestern Spain. This natural environment, consisting of vast wooded pastures, is the ideal ecosystem for the extensive breeding of Iberian pigs.
During the montanera, an essential period in Iberian breeding, the pigs feed mainly on acorns that have fallen from oak trees and natural resources found in these pastures. This exceptional diet promotes the natural infiltration of fat into the meat and contributes to the characteristic aromatic richness of great Iberian bellota hams.
The Montesano company is renowned for its expertise in the production of Iberian ham. The rigorous selection of cuts and adherence to traditional methods result in hams of exceptional consistency and remarkable flavor.
The hams are slowly cured in natural cellars in Extremadura for a period of between 36 and 48 months. This gradual maturation process develops a particularly melt-in-the-mouth texture and a rich, balanced aromatic palette with delicate notes of dried fruit.
Presented in thin slices and 80-gram portions, this knife-cut ham is ideal for refined tasting. To fully enjoy its aromas, it is recommended to take the ham out of the refrigerator a few minutes before serving so that it is at room temperature.
