EXQIUM's 100% Iberian bellota pata negra ham comes from purebred Iberian pigs raised in freedom in the dehesas of Andalusia, in southern Spain. This natural environment, consisting of vast wooded pastures, provides an ideal ecosystem for the extensive breeding of Iberian pigs and contributes directly to the exceptional quality of the meat.
During the montanera, an essential period in Iberian breeding, the pigs feed mainly on acorns that have fallen from oak trees and on natural resources found in the pastures. Each animal can consume several kilograms of acorns per day, which promotes the natural infiltration of fat into the meat and contributes to the characteristic aromatic richness of the great Iberian bellota hams.
The hams are slowly cured in natural cellars in Andalusia over a long period of time. This gradual maturation process develops a particularly melt-in-the-mouth texture and a rich, balanced flavor profile with delicate notes of dried fruit characteristic of Iberian pata negra ham.
This ham is made from only two ingredients: Iberian ham and sea salt. No additives, nitrites or preservatives are added. This preparation respects the tradition of Iberian ham and preserves the authenticity of the product as well as the rich aroma developed during the curing process.
Presented in thin slices and 80-gram portions, this knife-cut ham is ideal for refined tasting. To fully enjoy its aromas, it is recommended to take the ham out of the refrigerator a few minutes before serving so that it is at room temperature.
