La Brújula “do Xeito” sardines are an iconic specialty of the Galician coast. They come from the Ría de Arousa, an area renowned for the exceptional quality of its seafood.
The sardines are caught using the traditional “do Xeito” method, a small-scale fishing practice that respects marine resources.
They are caught during the months of July and August, when they are at their fattest and most flavorful. Fishing at dawn also makes their preparation easier.
After being caught, the sardines are steamed to preserve their texture and natural flavor.
The sardines are then sorted by size, with a preference for smaller ones, which are particularly prized for their delicacy.
Each sardine is carefully cleaned individually and then prepared using traditional Galician methods.
The sardines are canned by hand and then covered with a smoked olive oil that adds delicate and elegant notes.
Steam cooking combined with the smoked oil results in a tender texture and a subtly smoky, ocean-fresh flavor.
The can contains about 12 to 16 small sardines, perfect for tapas, appetizers, and gourmet tastings.
