La Brujula's "do Xeito" sardines come from the interior of the Arousa ria, in the area closest to the town of Rianxo, during July and August, when they are at their fattest. They are caught at dawn on an empty stomach, which facilitates the cleaning process.
They are then steamed to improve texture and preserve flavor, then selected and graded by size. Each sardine is carefully cleaned individually. Once cleaned, they are brined and prepared using traditional methods. The sardines are canned by hand before being coated with olive oil.

They are then selected and graded by size, with priority given to small sardines. Each sardine is meticulously cleaned individually. Once cleaned, they are immersed in brine and processed using traditional methods. Finally, the sardines are packed by hand before being distributed.
