Cheese made with raw sheep's milk and black truffles.
This cheese is produced using the manchego method. However, the Manchego PDO does not allow truffles to be used in its name, as truffles are not found in La Mancha.
The truffle used in this cheese is one of the best, the "Tuber Melanosporum" from Périgord, which is also found in the north-east of Spain.

This cheese, made from raw ewe's milk and the finest truffles, is matured for three months to achieve a perfect balance of flavors.
Too much ripening and we'd lose the good truffle taste, and not enough ripening and we'd lose a cheese with a certain character.
This is a cheese you can enjoy on its own or with a little black truffle accacia honey, which you can find in our grocery section.
