The 100% Iberian bellota Pata Negra DOP Dehesa de Extremadura Señorio de Montanera ham comes from purebred Iberian pigs raised in freedom in the dehesas of southwestern Spain. The Dehesa de Extremadura Protected Designation of Origin guarantees the origin of the animals, their rearing methods, and the traditional methods used to produce Iberian ham.
Iberian pigs roam freely in the vast dehesa landscapes of holm oaks and cork oaks. During the montanera, an essential period in their rearing, they feed mainly on acorns and natural resources found in this ecosystem. This diet promotes the natural infiltration of fat into the meat and contributes to the characteristic aromatic richness of bellota Iberian hams.
Señorio de Montanera is considered one of the most prestigious producers of bellota Iberian ham. The company is renowned for its rigorous selection of animals and its respect for traditional methods of producing Iberian ham. This rigor guarantees consistent quality and a refined taste.
The hams are slowly cured in natural cellars for a period of between 36 and 48 months. This prolonged maturation allows the ham to develop a particularly melt-in-the-mouth texture and great aromatic complexity, with delicate notes of dried fruit and a lovely long finish.
Presented in 80-gram portions and sliced with a knife, this ham is ideal for a refined tasting experience. To fully enjoy its aromas, it is recommended to take the ham out of the refrigerator a few minutes before serving so that it is at room temperature.
