Pata Negra Señorio de Montanera 100% Iberian acorn-fed ham comes from purebred Iberian pigs raised in freedom in the dehesas of southwestern Spain. During the montanera, an essential period in Iberian pig farming, the animals feed mainly on acorns and natural resources found in these wooded pastures. Each pig can consume several kilograms of acorns per day, which promotes the natural infiltration of fat into the meat and contributes to the characteristic aromatic richness of great Iberian acorn-fed hams.
Señorio de Montanera is recognized as one of the most prestigious producers of Iberian bellota ham. The company is renowned for its rigorous selection process and its commitment to preserving traditional methods of Iberian ham production. Each piece is carefully selected to ensure consistent quality and a refined taste.
The hams are slowly cured in natural cellars for a period of between 36 and 48 months. This prolonged maturation allows them to develop a particularly melt-in-the-mouth texture and great aromatic complexity. As the curing process progresses, the ham reveals elegant notes of dried fruit and a remarkable length on the palate.
Traditional knife cutting respects the natural structure of the ham and produces thin slices that highlight the fineness of the fibers and the shine of the delicately marbled fat. This presentation allows you to fully enjoy the melt-in-the-mouth texture and rich aroma of Iberian bellota ham.
